I know i've talked about this recipe before, but it's just SO good and easy, that it warranted another shout out. It is a perfect summer dish, and a great way to add extra vegetables into your diet. The other awesome thing about this recipe is that you can add in any kids of vegetables that you like...a great way to use up some things in your fridge!
QUINOA SALAD
-
Quinoa (1 cup uncooked makes well over 2 cups cooked, so I used about 1.5 cups cooked)

cucumbers (1 large English cucumber)

celery (5 big stalks chopped)

yellow peppers (1)

grape tomatoes (about 15 halved)

fresh basil

fresh lemon juice
-
salt
PROPORTIONS: I like to have ALOT of vegetables and less quinoa. DIRECTIONS:

Make quinoa as directed.

Chop all vegetables and mix with quinoa in a bowl.

Add a bunch of fresh basil to a mini cuisinart (or hand chop) with the juice of 2 fresh lemons. Blend on high. Pour over quinoa and vegetables.

Add salt to taste. Add more lemon juice as needed.
WHAT IS QUINOA? It is a highly nutritious, 100% whole grain gluten-free seed, that is a good source of protein, containing all 8 amino acids. And like I said, you can use ANY vegetables you like! Another "recipe" i like is quinoa, steamed asparagus & broccoli chopped, dill, lemon, and salt. It's so fresh and delicious, you should try that too!
